• Cut & Flavour: Short ribs boast exceptional marbling; the interwoven fat threads make each bite decadently tender and buttery.

• Cooking: Thin slices are ideal for shabu-shabu hotpot or sukiyaki – simply swish briefly in simmering broth for melt-in-your-mouth richness. They also excel slow-braised (e.g. in a rich stew) or grilled for barbecue.

• Pairings: Serve with ponzu or sesame dipping sauces. For a hearty hotpot, combine with napa cabbage, mushrooms and a garlicky soy broth.
