Yellowfin Tuna, or ahi, is less expensive than bluefin but not far behind in quality.
It may be used raw in sushi, sashimi or poke bowls with a more pronounced flavour than albacore. It also takes well to searing and grilling with large flakes when cooked.

All You Need to Know About "Sashimi Grade"
"Sashimi-grade" fish are caught by handline. As soon as the fish lands, its brain is pierced with a sharp spike and placed in slurried ice. Also known as "ikejime", the instantaneous death means that the fish's flesh contains minimal lactic acid for a better quality fish.
